Design healthy and tasty food for all

The major challenge for the R&D teams is to develop nutritional products which can carry specific health benefit while at the same time guaranteeing their organoleptic qualities. The Group is convinced that the success of its innovations depends as much on the relevance of its Health benefits as on its capacity to create pleasurable products.

The daily challenge of the research teams is to create foods, adapted and relevant for the targeted consumer, to enlarge possibly the types of food matrix, to integrate new healthy ingredients which could display unpleasant taste, to concentrate recipes or to improve the nutritional quality of existing products while maintaining consumer preference.

Future challenges will certainly be to design new food including bacteria or beneficial for health ingredients, adapted to new geographies and natural. From fine molecular approach to consumer emotional acceptance, from natural properties of ingredients to smart adapted technologies, R&D has to link these expertises to develop new business opportunities. By investing in this new field of research, Danone is looking for an opportunity to develop a wide variety of new products and to be present on new markets.

Moss Tekki : Food designing for a humanitarian project

:: Moss Tekki is born from a project that started in 2009. The objective : Produce a nourishing product made of local material for school children in Dakar, Senegal. Most of these children go to school with empty stomachs and buy sweets from street vendors for 50 CFA (0,08 €). The aim of this project is to allow these street vendors to sell, for the same price, a nourishing product that children will enjoy eating.

To conceive this new product, research on local products, their nutritive qualities and local food habits, was necessary. After a year and a half’s work on the project, a paste enriched with vitamins and minerals, made of 90 % edible plants and 10 % yogurt, was born. Packaged in small flexible silver tubes, the product has been sold in Dakar since April 2011.

Beyond its public nutrition mission, this project aims to impact on a social and local point of view : develop local agriculture and raws transformation, create a Senegalese company, run by Senegalese people to produce Moss Tekki with a Danone based product and process design, and finally bring a social support to the school street vendors while ensuring a nutritional education for children.
